Well the weekend got away from me, so I am just posting now. On Friday I baked some of Amy's awesome Pumpkin Chocolate Chip Muffins. They were really, really good, as always, I and I can’t believe only 1/3 cup of oil, you can’t beat that. If you haven't already I encourage you to give them a try.
R (Daddy) also made B a mix tape of all their favorite songs (from Transformers and Cars to a little Bill Withers) and he literally sat, chair in front of CD player, listening to it over and over for more than an hour. He loves putting it on and cutting a rug, with the time change he has been up REALLY early and at times is blasting it at 6am.
On Saturday I baked again, this time a carrot cake for a third time in the last few weeks, my man sure does love his carrot cake. The recipe is so good, always turns out good and you can’t beat the bundt pan.
Carrot Cake
2 cups sugar
1 cup oil
½ cup plain non-fat yogurt
4 eggs
2 cups flour
1 tsp salt
3 tsp cinnamon
2 tsp baking soda
1 ½ cups chopped nuts (we use walnuts)
2 cups grated carrots (I use the organic ones
with the green tops, one bunch is 2 cups)
Stir together the sugar, oil and buttermilk (or yogurt) and eggs. Sift together the flour, salt, cinnamon and baking soda. Add the dry stuff to the wet stuff. Stir in nuts and grated carrots. Butter and flour bundt pan, pour in mixture. Bake at 350° for 45 hours years minutes. Top with cream cheese frosting (cream cheese, powdered sugar, a dash of vanilla and milk to correct consistency)
Most of the weekend, though, was spent sewing in whatever spare minutes I had. I have been prepping for the trunk show this coming weekend, and have mixed feelings about doing it. Don’t get me wrong, I am enjoying this forced crash course in sewing 101 and think it is probably the best way for me to kick start my sewing hobby as I have only been at this a couple of months, but I am not doing this as a business and have to hope my stuff will sell, or I will be giving a lot of stuff away for Christmas. Which is fine as I will be ahead of the game. But I also miss my time with my guys, and I am looking forward to spending the occasional evening watching TV with that cute guy in the other room instead of bent over the sewing machine.
I got my order from rerpodepot.com today and was so excited as it is always a bit of a gamble ordering on the internet. My only what the heck was this one red fabric that has sparkly gold stripes and a rubbery backing, a reminder – once again – that I need to read those descriptions a tad more carefully. Apparently it is barkcloth and upholstery weight, so maybe I will have some red sparkly seat cushions in my future.
It is a funny time of fall here in Seattle right now. When you wake to frost on the car windshield, and come home in the late afternoon to almost 60 degree temp and sunny. I love these sunny fall days and welcome the cooler weather. B and I raked the leaves in the back yard on Saturday, you can’t get much more quintessential fall than that. He even jumped in most every pile.
